Recipe:
Guinness Spinach & Artichoke Mac & Cheese
Ingredients:
- 1 box Guinness Original Macaroni & Cheese
- 1 shallot, diced
- 1 clove garlic, minced
- 1 can quartered artichoke hearts, drained and patted dry
- 1/2 5 oz bag of baby spinach
- 2 tbsp Cabot Butter, unsalted
- 1/4 cup Cabot Mozzarella cheese (optional)
Directions:
- Cook pasta for 9 minutes (box says 12-15). Reserve 1/2 cup of pasta water. Set aside.
- On medium heat, sauté shallots, garlic, and artichoke hearts until shallots are translucent and just starting to brown on the edges. Add a little pasta water, then add spinach and sauté until spinach is wilted but still bright green.
- Add pasta and cheese packet and combine with the rest of the ingredients. Add the rest of the pasta water if needed to make everything creamy and totally combined. (I added about an ounce of shredded mozzarella to get that stretchy, cheesy consistency, but not necessary.) Serve hot.
Great vegetarian main course. Add your favorite protein – chicken, ham, ground meat, tofu – for a heartier meal.
